I normally do my cakes within the week before the due date.

Monday-bake then freeze cakes, and start on any elements that need to dry
Tuesday-write down a list of what I need to do, make MMF if need be, get cake boards together and any other things i might need
Wednesday-thaw cakes. Level, torte, fill crumb coat. let rest in a box overnight.
Thursday-final coat of icing, fondant the cake if necessary, might start decorating
Friday-decorate
Saturday-deliver

i don't refrigerate my cakes after putting fondant on. it will seal in the moisture and keep it fresh
