How Long Can A Fondant Cake Sit And Still Be Fresh?

I am hosting/planning/coordinating a fundraising event for breast cancer awareness.
I would like to make a cake for the event, however, I know I'll be super busy.
What I am wondering is... how long can a fully assembled, fondant covered (shelf stable) cake sit and still be 'fresh' to serve?

I think you could cover a cake a day or two ahead of time and it would be fine. If you have somewhere cool to put it (not the fridge). I have done this and it seems the longer they sit the moister they get. This is what I am told by a few customers.

ive had them sitting about for 5 days, and still perfectly fresh. and still good a few days after being cut too.
