I probably would have told the witch "you paid for them, they're yours" and left them there. Now She can tell people you took the cakes home so she should get a refund.

That was just so wrong of her! I can't believe she had other cakes brought in! Were you able to cash the check you had gotten earlier? If not, I would definitely not let it go without getting my money. Go to the principal -- yes, I know you're dealing with the PTA, but they are operating under the school name and the principal is a part of that and can put the pressure on to make sure they do the right thing. And from now on, especially with big orders, write up a really simple contract that just says what they ordered, the price agreed upon and when payment and delivery are to be made and make sure both you and the responsible party sign. Sorry you had to deal with her.
