I have a question about Chocolate Buttercream. Cake due to customer 3 pm Saturday and I am wondering how soon I can make and Ice cakes with chocolate buttercream (butter and milk version) without risking either melting or spoiling? It is now 11 am Friday.

That frosting will hold at cool room temp for at least a day. the sugar acts as a preservative for the butter and milk. You can make it now.

I make chocolate buttercream all the time, I use heavy cream in it and it is never refrigerated.......maybe its ok because I put meringue powder in it? Never have a problem. Same thing when I put sour cream in the cake mix.
