Leaf Green Is Turning Brown?!

I noticed today some cupcakes that were frosted with green BC a few days ago now appear to have a rather brown BC. What is going on? They are chocolate cupcakes... But I've used white BC on chocolate before and not seen any color change.
The green used with Wilton leaf green. And there was quite bit used and after a day or two I would have expected a darker green but not brown. How can I prevent this in the future?
