My mother loves pina colada flavored stuff and wanted a pina colada flavored cake filling.

The only problem is that I have a horrible allergic reaction to pineapples icon_sad.gif Is there a way to make it taste the same without those fruits that hate me? lol

I have no idea, sorry. It's not pina colada without the pineapple.

I would substitute pineapple extract and water for any pineapple juice called for in a recipe. (Or maybe lemon juice/water and pineapple extract to replace some of the pineapple juice "bite".)

I'm slightly allergic to fresh pineapple; it makes the skin on the inside of my mouth slough off - but canned pineapple is fine.

pineapple extract would work. I've tried it before. Made pinacoloda cake and icing without fresh or canned pineapples. good luck! icon_smile.gif
