Hello, I am making a castle wedding cake soon and the bride wants all chocolate!! so I need a good solid/ stable chocolate scratch cake recipe please

my favorite recipe for chocolate cake:

2c flour
1c cocoa powder
2c sugar
1tsp salt
2tsp b.soda
1tsp b. powder

mix these together well, then add

1c sour cream
2 eggs
1/2c veg. oil
1c hot water
1 1/2 tsp vanilla

mix on low speed until incorperated, scrape bowl & mix again on med-high for about a minute.
bake @ 350 for 30-40 mins. let cool in pans for 15 mins then cool on racks
makes enough for 2 9" pans

My favorite choc cake - & yes, I've stacked & carved it before - is

The only change I make is to add a small package of choc pudding w/ the dry ingredients.

i dont know about carving, but its good for stacking, ive done a 3 teir 3,6 &9" cake without support and it was fine ( i dont recommend no support for a wedding cake though, mine was for a birthday and was put together right before it was delivered so...)
