I am doing an armadillo cake and i am nervous about it. i want to start early in case i have a disaster. if it comes out good, can i freeze it until celebration if it's wrapped in fondant?

The only thing about freezing it is when you thaw it the fondant will get condensation on it, could lead to a mess. Maybe freeze just the cake and cover later with fondant
