There are so many in the recipe forum, which one do you like?

I found one with good ratings but you have to cook some of the ingredients and I won't have a stovetop in the bakery.

This gingerbread recipe is from the Wilton pan where you press the dough into shaped openings rather than roll and cut, but I think it would work fine for rolling too. We liked the taste of it.

3 c flour
2 t ginger
1 t cinnamon
1/4 t salt
1/4 t ground cloves
1/2 t nutmeg
3/4 c (1 and 1/2 sticks) butter, softened
3/4 c packed dark brown sugar
1 egg
1/2 c molasses
1/2 t vanilla

Just make like usual cutouts -- no cooking. Cream butter, sugar, add egg, molasses and vanilla. Blend spices and flour and add to creamed mixture. Bake 9-10 minutes @ 350.
