vanilla pound cake with vanilla buttercream is always popular.
I sell a lot of coconut cake with pineapple filling for summer weddings.
Dark chocolate fudge cake w/ peanut butter fluff frosting
Lemon w/ lemon curd and cream cheese frosting
Vanilla Bean w/ vanilla buttercream (American)
White almond w/ Raspberry filling
It's really a simple thing to do. I'm a box mix caker so I start with a strawberry cake mix (I use DH), and substitute margarita mix for half of the water amount. I'll also grate in some lime zest for color. It's a big hit, and it's something I learned from my mother.
A toss up between French Vanilla or Chocolate fudge with WBH Buttercream icing.
I dont't have customers yet but my friends and family usually rave about the WASC with blueberry filling and my decadent chocolate with dark chocolate ganache (my personal fave).

What do you use to fill & /or frost it?
jovigirl - I usually use just plain buttercream (I'm a fan of the Wilton buttercream) with a little lime juice added in. I try not to play with the flavor in the buttercream because I don't want it to distract from the cake.

Red velvet cake with cream cheese filling and icing Yummy
Just as an FYI (along the same lines as the margarita mix) - I've used pina colada mix in a white cake before as well. It gives a nice flavor for those who don't like the texture of coconut but like the flavor. I actually don't get many requests for this, but I've done it a couple of times.
I am looking for this icing my grandmother use to make. When you would cut the cake the icing would make a crackling noise . It was hard & sugary. I remember going to the church fairs & hearing that sound when they would cut you a piece of cake. She would beat her egg whites until she would turn her plate upside down & the egg whites would stick to the plate& not fall out. I do not know what she would put in the egg white. She would not cook the ingredients. Any one who would know any information please let me know. Thank you.
