I am making a castle/ dragon cake with a small lake in the front. I have never worked with sugar in the hard crack stage. I am scared I will ruin pans and my new flat top oven....somebody please tell me how to do this so I can pour the hot sugar/water into the lake and it will harden and look like glass! I have already carved an opening in the 4 inch deep foam for where the lake will be and made a foil lining to hold the sugar. How much water and how much sugar do I use? The lake will hold about 2-3 cups. Thanks!
