I will be making my DD's wedding cake in 2 weeks and she wants smbc icing on it. Does this have to be refrigerated or can it sit out for 2 days? Also can I use an impression mat on the side of it? I'm looking to make it to serve 160, will 8,12, 16 be large enough? TIA

Yes smbc can sit out for two days in a cool environment.
Nope on the impression mat. Smbc does not crust.
