Do you know how malted unbleached flour compares to regular unbleached flour ?
I read that it keeps the cupcakes from falling, is that true?

I've never heard of using it in cakes. I've only ever seen it used in breads and bread products.

You could write to King Arthur Flour and inquire. They sell both malted flour and malt powder, and would know where and when it should be used.
