does any one have a GOOD recipe for a white chocolate mousse filling. I have a bride that wants chocolate cake with white chocolate mousse and strawberries. I am very nervous about the fresh strawberries with the mousse but she is very insistent. I appreciate your help guys.

This recipe is sooo yummy. You should test it for "sitting out time" because it's made with whipping cream but I think it should be okay.

Lemon Cream Filling (you don't have to use the Lemon)

3 Cups (35%) Whipping Cream
Lemon Rind from 2 Lemons
1 Cup Lindt White Chocolate (chopped fine)
1 pkg. Jello Instant Pudding Mix (Vanilla) (not the fat free one!)

Simmer cream and lemon rinds together. Let cool for a few mins. then remove the rinds and add the chocolate, mixing till chocolate melted. Let cool in fridge for a good few hours till well chilled.

Whip in mixer while adding about 1/2 a box of the Vanilla Pudding Mix. Whip until mixture is nice and firm - don't overwhip or it will curdle.

So delicious. Do a test or two.
