They are very easy to make and yes they can be frozen. My recipe is at home, but as soon as I get there I will post it for you. I love them!

Here is the recipe that I use:

8 oz. cream cheese
2 lbs. powdered sugar
1/8 - 1/4 tsp. peppermint flavoring
icing color
granulated sugar (to roll mints in)

Mix all ingredients (except granulated sugar) and knead until creamy and smooth. Roll into tiny balls, dust with fine granulated sugar and press into silicone molds. Immediately remove from mold and place on wax paper. Allow to dry.

I've used this recipe several times and they taste great. This makes about 150 - 200 mints depending on their size.
