I'm making the chicken recipe below for a friend's birthday dinner and wanted some side dish suggestions that are more special that my standard green beans with this dish. Any help is appreciated!

1/2 cup olive oil
1/2 cup ranch dressing
3 tablespoons Worcestershire sauce
1 tablespoon minced fresh rosemary
2 teaspoons salt
1 teaspoon lemon juice
1 teaspoon white vinegar
1/4 teaspoon ground black pepper, or to taste
1 tablespoon white sugar, or to taste (optional)
5 skinless, boneless chicken breast halves

Steam thin asparagus and Frenched fresh green beans until tender-crisp.
Meanwhile, saute thin-sliced chopped pancetta over medium heat to render out the fat.
Add the asparagus and green beans to the pan and saute until the pancetta has crisped.
Before serving, add fresh cracked black pepper and a drizzle of lemon juice.
(Use about 1/4 lb pancetta to 2 bunches asparagus and 4 cups green beans).

You're welcome! I love this dish b/c it's easy and goes with lots of different foods. One of DH's friends is famous for not eating veggies and even he likes this dish! icon_smile.gif
