Do you think it matters if I use chocolate ganache or dipping chocolate for strawberries to put on a chocolate ganache wedding cake. Have you done strawberries for a cake like that? icon_confused.gif I have done that kind of cake and also dipped chocolate strawberries but not together before.

If its for a Wedding, I would use Ganache.

I would be careful using ganche for dipping. Ganche is not meant to be hard, the cream or butter (fat) that you add to the chocolate to make it a ganche makes it softer, which is why its used for truffles and fillings. If it will be sitting out for a while, I doubt it will ever set up on the strawberries as I see most chocolate dipped strawberries....but thats just my 2 cents...
