I've been toying with the idea of ringing up the Environmental Health and going legit. I'm only doing cakes in a very small way, but I think I could do quite a bit of business if I was able to advertise, etc.

Anyway I don't live in a new fangled house and I was petrified he'd come in and condemn the lot and I'd be gutted, my house might not be stainless steel and marble topped but its clean. So I've been putting it off and off. This morning at 10.50 I rang and asked him would he come out on a preliminary inspection I was thinking of going into Home Baking for Celebration Cakes as a business. He said he'd be out at 2.30, I nearly collapsed on the phone, I was expecting next week......

He came, he saw and he said he just wants to cast an eye over the legislation again just in case he missed something but as far as he can see I am very low risk (no fresh cream) and he's given me the unofficial go-ahead and he'll ring me tomorrow with the definite word. I could be Certified next week.

I'm so relieved and excited and I'll be sick with nerves till I get the call tomorrow, but at the same time, I know if there is anything it will be very minor and fixable. I can't believe I rang and its over and done with so soon...... keep your fingers crossed for me everybody, Chapel Cross Cakes could be a reality instead of a pipedream within the week!
