Coconut Filling/buttercream

I've looked through the recipes here and found a few that *may* work. I want to make a filling for a Pina Colada cake that is either a buttercream or creamy mousse type filling. Anyone have any good recipes for this?

Also, if i use cream of coconut in a recipe, does it have to be refrigerated after filling a cake, then frosting and fondanting? I'm afraid of the condensation caused by refrigeration on fondant so I'd rather have a recipe that does not require refrigeration.

No, cream of coconut won't make the cake refrigeration only (cream of coconut does not contain cow milk).

However, the ONLY fillings that I can think of that would work for your can, WOULD need to be refrigerated.

For a coconut cream filling, I would make either a regular pastry cream or Bavarian cream and flavor it with coconut extract instead of vanilla. Then I would mix in some shredded coconut.
