I'm in the middle of making madelines and the recipe calls for lemon peel and I just realized that I don't have any.
can I substitute lemon juice?

Per the substitutions chart on allrecipes.com 1 teaspoon of Lemon zest can be recplaced by 1/2 teaspoon lemon extract OR 2 tablespoons lemon juice. HTH!
