Ri On Fondant In Frig?

Hi all, I am one of those people who does not refrigerate cakes but I have a cake that a friend is picking up on Monday evening for a Wednesday party. Normally I would tell her no problem leave it in the box in a cool place but....

This cake has cream cheese icing and I'm not comfortable with it being out that long. So I'm putting the gumpaste flowers on a removable plaque so they don't go in the frig but the decorations on the cake will be done in RI. Will the RI survive the condensation? Any words of wisdom would be greatly appreciated.
