When applying an impression mat to a cake, do you use a roller over the fondant, then put it over the cake? If so, how do you not mess it up the impression while putting the fondant on the cake? Or do you put in on after you put the fondant on the cake? If so how do you do that? Thanks

I am in no way qualified to help you with this, but I would apply the mat after the fondant is attached to the cake.

I would think that it would be hard to impress the fondant an then try to put it on the cake an not mess it up.

Maybe someone better qualified can help though.

Actually one can use either method. Usually you roll the fondant out w/a special roller. If you don't roll it too thin it will hold the impression.
If you are using a mat, rather than a rolling pin, then you can do it which ever way works best for you. You won't get as good/deep an impression if the cake is covered as you probably won't press as hard or as evenly as needed.
