Choc Ganache What Went Wrong?

Ok I made a batch of chocolate ganache. I used 8 oz of heavy cream and 8 oz of chocolate. The whole batch came out super greasy. Does anyone know what went wrong? Any help would be greatly appreciated. Thanks.

same measurements that I always use.

What kind of cream and chocolate did you use?

Could there have been some grease residue on the spoon or pan? Maybe something was wrong with the chocolate, bad bad?

Hmmm. I suspect the chocolate, as well. What brand were you using? Some brands don't use just cocoa butter for the fat, but also include vegetable shortening, which would result in greasy chocolate.

Sounds like you over cooked the chocolate and it separated...that is my guess. Try adding some shortening to it.

I ran to the store and bought some more chocolate to make another batch. This time I bought Ghiradelli Baking Chocolate and it worked out perfect. I've only made ganache a couple of times and I've been using Hershey Special Dark Chocolate, never had a problem until tonight. Just out of curiosity what kind of chocolate do you all use?
