How And When To Freeze/refrigerate Cakes?

I have to make 10 valentine cakes. How can I freeze and refrigerate these. I cannot make them all in one day so I am hoping there is a way to freeze them

Hi,
Bake the layers, cool, double wrap in plastic wrap tightly, then aluminum foil, and freeze. Thaw in fridge, overnight when needed.

I am making one for work. I must be careful how much I feed my hubby....he's diabetic...his meter is ready to blow up since I started decorating!
