One more question about the cookie bouquet. Do you guys wrap your cookies individually and then shrink wrap or just plain wrap whatever you have the cookies in? Also, if I use buttercream (crusting of course), can I still wrap the cookie without the icing messing up?

I individually wrap each cookie in the bouquet. That way if the bouquet is used as favors for the event, each person gets an individually wrapped cookie. I then use a bouquet bag(big cello bag) to wrap the entire bouquet.
I have not used the crusting buttercream-but maybe someone else will know the answer to that.
