Adding Extra Eggs To Cake Mix With Pudding?

Hello All! Is it true that I need to add an extra egg to cake mixes when I add pudding mix? Why is that? Thanks!! Also, some say the eggs should be room temp? True?

I don't add an extra egg. Also, I do make sure my eggs are pretty close to room temp.

If I am simply adding a box of pudding mix to a boxed cake mix, I do add one additional whole egg. I think it helps firm up the cake well.

Ideally, your baking ingredients should be at cool room temp but in the 11 years I've been doing cakes, I only remember to bring out my dairy ingredients about 1% of the time. icon_smile.gif

I'm w/sparkle........in the bakery there were many times I would get a rush order that didn't allow time for the eggs to come to room temp and the cakes still turned out just fine.
I don't add extra egg to mix w/or w/o pudding added.
