Ive seen all these really cool cake toppers like numbers and I think they are made out of gumpaste or fondant and i am wondering how you would attach them to the top of the cake so that they dont fall...

Depending on the design you could attach them using wire. You could also use a sucker stick glued to the back with royal icing.
