I have a request from someone who does not like sweet icing, and would really prefer something like a whipped cream icing. She is just wanting her wedding cake to be pretty simple because she is putting fresh flowers on it. But I do not feel safe in using something like whipped cream and leaving it out all day. Has anyone used a low sugar icing before? Or what would be good for something that will set out for hours at room temperature apart from buttercream?

Try SMBC. It's really good and light. There is a thread in the cake decorating forum I believe that gives you step by step. That's how I learned.
