Anyone have a tried and true recipe. From scratch or even a doctored up mix is fine. Thanks all.
Coconut-Pecan Frosting/Filling
1 Cup Sugar
1 Cup evaporated milk
1/3 cup butter
3 egg yolks
1 tsp vanilla
1 1/3 cup flaked coconut
1 cup chopped pecans
Mix sugar, milk, butter, egg yolks, and vanilla in a 1-qt saucepan. Cook over medium heat, stirring occasinally, until thick, about 12 minutes. Remove from heat. Stir in coconut and pecans. Beat until frosting is of spreading consistency.
I have made this many time. It is really good.
I have a seriously EASY recipe for the coconut filling that I got from "Gourmet".
The recipe was called "Inside Out German Chocolate Cake" and although I don't use the cake part much==the filling part is SO much easier to make than on the stovetop. I'll try and dig it out for you.
Otherwise--you could go to epicurious.com and runa search. It should come up.
