Help! How Many Mini-Cupcakes From One Cake Recipe?

Hi all,

Looking for help fairly quickly...is there a rule of thumb to figure out how many mini cupcakes can be made with one recipe of cake batter? I plan to use JanH's Southern Red Velvet II soon, but have to figure out how many batches I'll need to make 120 mini cuppies. For reference, the recipe says it yields 3 - 9" cake layers.

Ok --- now I don't know this for sure.. I'm just doing a little guessing to try to help you out. Someone else might be able to come around and tell you for sure and that would be the best thing!!

I made regular cupcakes last week and I used 2 cookie scoops for each cupcake. So the mini cupcake would definitely only need 1 scoop. I'm thinking that each scoop is around 1 tablespoon. So 4 tablespoons is 1/4 of a cup.. so there would be 16 mini cupcakes in 1 cup. Most mixes probably make at least 3-4 cups. So I'm guessing anywhere from 48-64 mini cupcakes.
