I use the icing buckets from the grocery store bakery. They give them away and they have a gasket in the lid so they are nice and airtight. Of course I clean them thoroughly before using them. The small buckets can hold ten pounds of ps or brown sugar and the large five gallon bucket holds 25 lbs flour with room to spare. You gotta love getting them for free. They are anxious to get rid of them ![]()

Remember, it's commerical soaps. A box of dishwasher soap is $95, but it's 4 big blocks (approx $25 each) and each block last 4-6 weeks. My 3-compartment sink soap is $40 a bottle, but it lasted me over 7 months (most of my dishwashing is done thru the dishwasher). I also had Eco-Lab set up the soaps on automatic dispensing equipment so it's always automatically measured and dispensed (so no employees wasting it!).
But yeah, buying in bulk is always best. Cream of tartar, when bought in the 3 oz bottles at walmart, is $4.78, which works out to about $1.60 an ounce. A 25 oz bottle thru Sysco is less than $20 .... about 80 cents an ounce. The lids that go on disposable 1/2 size catering pans, when purchased individually at GFS, are 99 cents each. When I buy them by the case on a truck order, they work out to about 20 cents each.

had issues.... so when C&H isn't on sale I use publix... that my problem?

Well, Rocketgirl, I hate to say that and get lynched, because I don't know anything about that brand, but I can tell you I have been very unhappy with every other brand that I've tried that wasn't C&H. So, it is possible! The Sam's brand stuff... Bakers and Chefs I think it's called... won't touch it with a ten foot pole even though it's good and cheap. I can always tell the difference, it makes my icing pasty and grainy and it doesn't taste as good. Other people can tell the difference too, so I know it's not just me! (I mean when they eat my icing, they can tell if I've used that brand!)

I Just asked whoever was in the bakery. I would get a mix of big and small. They are great! I asked once at walmart and got 4 small and 2 large all at once. I have gotten them from the local food store too. (I buy alot in bulk LOL we are a big family)
beware of cheap ps....it's cheap for a reason! I just bit the bullet and went for the good stuff.
Also- i once got a 50# block of Alpine (hi-ratio) that had gone BAD! ![]()
It smelled horrid, and the guy at the warehouse was trying to tell me there was nothing wrong with it!
He exchanged it for me-but with another box from the SAME batch number!
So I had to go back a second time and demand another box with a different batch code! yeesh!
I will stock up when C&H goes on sale.....

Ohhh... the buckets are an awesome idea!
I purchased those giant ziplock bags as liners for my bulk items to keep all the creepy crawlies and moisture out. They're huge. I could probably fit 100lbs of powdered sugar or flour in those babies. I loves em!
My costco doesn't sell C& H. I'm not sure what the brand is. The first bag of ps I bought there was so lumpy it was tough to use, but the second 50# bag I purchased (at less than $.50 a pound!!) has been perfectly smooth. buying in bulk is tough because you've got to front a lot of cash, but it's such an incredible savings!!
I still haven't bit the bullet for 50# of sweetex. I'm usually making all butter buttercreams so I don't rely heavily on sweetex, but I might just have to splurge one of these days. Especially since butter is so dang expensive!
