Substituting In Nfsc - Not Another Butter Question

I don't know if anyone can help me, but, I have someone requesting some diabetic safe cookies. I am in love with the NFSC recipe. Could I sub the sugar with Splenda or artificial sweetener?

If anyone has any sugar safe cookies, please share some recipes with me. I am at a loss! icon_cry.gif

I am kinda hoping for tried and true recipes that have really convinced someine with the results.!

When using Splenda, it will change the texture of most recipes. I recommend using 1/2 sugar and 1/2 Splenda to cut back on the sugar/carbs.

I would try making a trial batch with all Splenda and then one with 1/2 and 1/2 and see which one works best for you. I haven't personally used Splenda in NFSC, so can't tell you my results icon_sad.gif Hopefully someone else can jump in.
