Hi all,

I am making a cake for a friends birthday who wants a sponge cake with jam and cream filling and mint green frosting. ANy suggestions.

I am at a loss, becasue buttercream is going to be too heavy to frost it, and the jam and cream filling is not stable enough for fondant.

Help please.

How about a whipped icing? I hate the stuff, but other people rave about it.

Maybe a cream cheese frosting......a crusting cream cheese frosting... icon_confused.gif

Italian meringue buttercream is such a nice, light buttercream and goes great with these flavors... Otherwise, I agree, I am not a fan of the nondairy whipped cream but I am truly in the minority, so if you live somewhere where you can get your hands on Pastry Pride or Bettercreme you might want to check one of those out. You can color them, although I am not sure if you can get them all the way to mint.
