Whats The Best Timeline In Making A Cake?

What im wondering is say I wanted to make a cake ready to be eaten on Wednesday. Whens the earliest I could bake the cake, cover it and decorate it ready for the wednesday.

Would it stay fresh if I covered and decorated it on Monday?

I usually bake my cakes the weekend before they are due, freeze them, take them out on Wednesday or Thursday night and crumb coat them and finish them up the next night for a saturday delivery. It also depends on what you are covering them in and what your filling is. Fondant has a better "seal" on the cake and would stay fresher than the buttercream only.

I would think you would be alright as long as you keep it covered tightly.

for saturday cake I....

Bake wed.
Make icing thursday, fill and crumb coat
decorate on friday

sometimes I spread it out more if I am busy..

Yes, it should stay fresh. But, I think it's good advice to always try your own recipe with your own timelime. Recipes vary....

For my weddings, I bake on Wed, finish on Thurs/Fri for a Sat. wedding.
