I baked a WASC cake Wednesday night for a Sunday afternoon function? I did wrap in several layers of saran wrap. Now I am second guessing, wondering if I should rebake? Wondering if it will still be moist? Does anyone have any suggestions? Thanks for reading.

I bake cakes early all the time. If it's for a cake due the next day, just wrap it in plastic wrap or foil. If it's for a cake due in a week, double wrap in foil, freeze, then take out a day or two before it's due and let it defrost, then decorate.

So, since I didn't freeze, I should rebake you think? Sorry if I'm being dense. I really don't want it to be dry, it's for family icon_rolleyes.gif

I freeze my cakes all the time, and the turn out is awesome..You will find that it will actually be more moist..then if it actually were baked the same day..Alot of bakeries do this..It will not harm your cake..Just make sure it is tightly wrapped..Good luck..
