Are carrot cakes two or three layers? I'm going to enter a carrot cake in our State Fair next week and I thought they were two layers but a lady at work brought one in to share and it was three layers.

Also, I have to place my cakes on a 10" cardboard square. Should I make my carrot cake 8"?

3 layers, definately.
An 8 inch would be fine, but kind of small.

I usually do 3 layers 9-inch but an 8-inch would still work!
