I'm doing a full sheet cake for someone and I'm trying to look for a buttercream icing recipe that you do not need to refrigerate. I used to work at a bakery and I know we never refrigerated our icing. We just kept it in an airtight container. I'm looking for an icing that is not too sweet and not the whipped topping type. The cake is for Sunday but will be icing it on Saturday and I need the icing to hold.

I use a recipe from another CC member named Serious Cakes. Search for her on Youtube. She has a video about making her buttercream, including the recipe. I find it to be an excellent recipe and crusting perfectly, no fridge required.

We have found that our buttercream recipe made with real butter can be left at 65-75 degree room temperature and will not spoil. And this is in the heat and humidity of central Florida.
