So I Forgot The Oil...

I forgot the oil in my apple cake.

3 c flour
2 c sugar
1 tbsp baking powder
salt, cinnamon, vanilla, etc...
1/3 c apple juice
4 cups chopped apples
1/2 c each raisins and walnuts

Supposed to have 1 cup of oil.

It took the usual amount of time to bake and looks normal. But is for a customer so I can't cut it. What do you think?

I wouldn't think so. There is plenty of liquid in there. Do you have to level it? That should tell you. Good luck.

Well, I delivered it as is and am holding my breath. It is for a repeat customer and was due at 9:00 this morning, so I didn't have time to do it over. (That's what I get for not doing it the day before.) If she calls with a complaint I'll happily refund her money or redo it. At least I call it a coffeecake so maybe they'll think it's supposed to be that way. I also did a lemon layer cake and that one was fine, so maybe it will be o.k.
