Is there a difference between the Merkens white chocolate discs and baking chocolate? I want to make white chocolate buttercream and have a bag of Nestles white chocolate chips and a couple of bags of Merkens white chocolate discs. Can I use either of these?

I don't know. I know when I've made white chocolate buttercreme, I used white chocolate chips.
But I'll give you a bump up and maybe someone else can answer.

I would look at the ingredients, as far as I know the nestle's are not actually white chocolate but vanilla chips. I don't know about the merkens. It needs to say cocoa butter in the ingredients to be real white chocolate, hth.

It doesn't say cocoa butter on the one bag I have but I use it to make candy so I know when it cools it does start to harden up. That's why I was concerned with using it in icing. It may be a candy coating as opposed to white chocolate. I will probably check around for something else and stick to making candy with what I already have.
