I have been asked to do a fish tank cake for a 21st ( family dinner,so not too big ) & just have a few queries icon_biggrin.gif
I'm thinking of halving & stacking an 11" square ( lemon pound cake with lemon curd filling, covered with white choc.ganache & fondant ) & doing all the fish etc as chocolate transfers - will they stick to the fondant okay if I use melted chocolate ? or would I be better off making them out of fondant?

This is for the son of a woman my mum works with ( no family discounts icon_lol.gif ) but I'm pretty hopeless pricing wise - would $ 75 be reasonable ?

Any help , input will be very much appreciated icon_biggrin.gif

The chocolate fish should be fine and melted choc will hold them.
As for pricing you should charge by the slice so charge for whatever servings your cake will make. It helps to know what the going rate is in your area
