i have a cake order.. and they want to pick it up tonite , but the party is not untill saturday. i'm decorating it with bc fosting. what i would like to know is if the cake would still be good 'till then ??

I think that's pushing it a bit. If it were covered in fondant.....maybe, but I don't know that's a long time. When did you bake the cake?

It's kind of late now since I'm sure you have it ready for pick-up, but in the future I would explain to the client that you really cannot guarantee the freshness of the cake 3 or 4 days out from when it is picked up.

Usually for a Saturday party I bake Thursday, torte, fill and crumbcoat, refrigerate than decorate on Friday for pickup.

Yes that is pushing it a bit but if that's what *they* insist on tell them you can't guarantee freshness.

Tell them to keep it in fridge if possible and that will help some.
