Cake Flour Or Regular For Red Velvet????/

Just curious if using cake flour over regular would impact the consistency of a red velvet cake. I need to make a 14" cake and worried it will be dry.

Cake flour has less gluten and will result in a softer cake. Depends on the recipe, but it is generally not recommended to sub them out willy nilly icon_smile.gif
