What is the shelf life of royal icing -Wilton's recipe? I have a batch I made and it's in an air tight container -but it's been there for nearly 2 weeks. Can I use it or should I just make a new batch? I don't need much -that's why I hate to waste time and ingredients making a new batch. Thanks!

I would imagine it is still good. As long as it hasn't seperated, it should be fine. Someone else may know better, but I would still use it.

Is that how you can tell it's bad? Because mine separates very quickly. Also I hear that you are not supposed to refrigerate RI. Is there a better way to store or preserve it? Or do most of you only use what you need immediately?

Mine seperates very quickly too -so I hope that isn't an idicator.

I've used mine at 2 weeks out, and it's been fine. You may have to re-beat it or really stir it well to smooth it back out. (I suspicion you can use it longer, but that is about the longest I've gone myself.) HTH
