Cookies Baked Lumpy??

Hi,
The last batch of NFSC I made baked very very lumpy and bumpy..Some of the bumps were BIG icon_eek.gif

Does anyone know why that would happen? Is it from air, like I over mixed the dough maybe??

I find that this happens to me when I reknead the dough after the first cut out. The butter is still cold and air gets trapped in between the layers. I try to roll out as much dough as possible on the first go round and cut out as many cookies as possible with the least amount of waste. I then reknead the leftover dough until it is really soft and re refrigerate it. I still get air bubbles sometimes but as soon as the cookie comes out of the oven I squah down the bubble with my finger. Hope this helps...

I have had the air bump a few times and I just tap it down with my finger when I am doing the 'peek into the oven and see how it is doing' an that seems to work for me.

I run into this problem too. After I pull the cookies out of the oven, I slide a wide spatula over them while they are still hot, and wala.... lumps gone! icon_biggrin.gif
