Smbc At Room Temp

What is the longest any of you have left SMBC at room temp?
I am making a Topsy Turvey cake covered in fondant and they want SMBC filling and crumbcoat. I am concerned as to how long it can be out at room temp due to the fact it will be covered in fondant it will not be refrigerated, they are picking up the day before the party.

I have eaten IMBC at 5 days old. I iced a small cake with it and made sure to eat a piece every day. Nothing happened. I know other decorators say they leave it out for a couple days. I wouldn't sell it to a customer past the couple day mark, though, I was just experimenting on myself.

It will be perfectly fine for up to 5 days at room temp. I don't know about the cake tho'LOL that could be a tad stale.
