I have seen several cakes where one layer has a deep quilted look, that almost gives the impression of a pillow . The sections between the quilting are puffy not flat? I'm new so excuse my incorrect terminology.

I think the secret to "puffy" quilting is very thin fondant. Jennifer Dontz' quilting always looks amazing and she claims that very thin fondant over a full layer of buttercream is the secret. She shows you how in her new videos.
