I need a chocolate icing recipe for dipped strawberries. Also, is it necessary to use an electric melting pot or can I use a double boiler to melt the chocolate? Thanks! icon_smile.gif

I don't use fancy chocolate to do mine, I just use that chocolate bark from the grocery store and melt it in a big measuring cup in microwave. I do about 3/4 - 1 cup at a time. It stays soft for a little while. I know others use fancier stuff but this works for me.

For dipping and coating, I use Ghirardelli's Double Chocolate bar. I find it at SAM'S during the holidays, and I stock up! It isn't "real" chocolate, so it doesn't have to be tempered but it has a rich flavor and good texture. When I run out of this, I use half real chocolate chips to half Wilton CandyMelts.
