I am totally slammed this weekend with cakes and cookies! I think it's time for the boss to hire me an assistant!

Anyway, I have a topsy turvy wedding cake for Friday afternoon delivery. All my other cakes are due Saturday, so I want to get this big one (my only big one) out of the way so I have all day Friday to do Saturday's cakes and cookies. The time table I had in my head is this

Bake, wrap and fridge cakes Tuesday
Carve, fill, crumbcoat, fondant Wednesday
Fondant details and decorate Thursday

I'm probably going to deliver this assembled, too, since the reception hall is a half mile from my bakery (back roads, little traffic, smooth pavement!!!).

Does this sound okay? By the way, all the fillings do not need to be refrigerated.

Thanks for any help you can give me.
