I saw the Ace of Cakes episode last night. I remember a thread a while back wondering how he did the trees for the Harry Potter cake. Last night he let the world know what is was he used! He said that it was royal icing that was allowed to dry, (it looked like it was on parchment paper) and then scraped up and chopped (pulverized). They used it for the moss on the mountains of the Kung Fu Panda cake. It looked really neat!
