I hope someone out there can answer this. My friend was having problems with her cake batter not yielding the amount it's supposed to yield (directions say 7 1/2 c, she's getting 5 c). She's using the correcting measuring cups (wet/dry) and she uses a handmixer. Can anyone help answer or explain this? icon_cry.gif

I swear it depends on the phase of the moon or the alignment of the stars icon_surprised.gif
I have the same problem at times, too. My SIL and I laugh about it because when she makes her gumbo sometimes it comes out in extra gallons and sometimes not.
Many times I'll do 1.5x the recipe to make sure I get enough batter. I'd rather have extra than not enough.
